Grass Fed Beef is a lean and wholesome dietary staple. It is an important source of protein and essential fatty acids - CLA 18:2, and Omega 3’s; DHA 22:6, DPA 22:5, and EPA 20:5. Industrial Beef is "fattened" with a minimal production of lean muscle mass. Studies show critical differences in how lean and fatty beef affect the human body. Industrial Beef is raised in something called a feedlot. This is an industrial complex created to "fatten" beef as fast as it can. The cows are fed an unnatural diet based on corn. This isn't the kind of corn you and I pick from the garden for a summer dinner. This is corn that has been modified to produce a high level of starch. Even with it's 4 stomachs the cow can't digest this diet. It makes the cow sick with acidosis. But the objective is to quickly fatten the animal to get it cheaply to market. Only time and grass can produce extensive natural muscle development in a cow. Any shortcut is an illusion. When an animal is “fattened”, minimal lean muscle mass is developed. The industrial model relies on marbling enormous quantities of saturated fat into the animal's muscles to achieve greater size and weight. This is unnatural and toxic to the animal. Antibiotics are required to counteract the resultant dietary acidosis until an animal is slaughtered. This breed, Piemontese, is superior in every respect. It's natural genetics creates an animal that is extremely lean yet the meat is very tender and extraordinarily flavorful. It is also high in healthy fats (as long as it is fed grass and not grain) and very lean. When we eat meat we choose grass fed so we thought we knew what this beef would taste like. We were wrong. It was a completely new experience. It's very flavorful and the best part, for us with small children especially, is that it's very tender and easy to chew. You can purchase as little as 20 pounds. The package is typically made up of 5-6 pounds of ground beef (over 95% lean) and the rest are steaks and roasts.
